Roasted Garlic Green Beans
PREP TIME 5 minutes minutes | COOK TIME 25 minutes minutes | TOTAL TIME 30 minutes minutes | YIELD 4 servings

1 pound green beans trimmed and washed

1 tablespoon olive oil
-
4 cloves garlic pressed
-
1 teaspoon salt or to taste

1/2 teaspoon pepper or to taste

Optional > lemon zest
Instructions:

Preheat oven to 400°F.

Place green beans in a large bowl. Add about oil and garlic, toss to coat.

Cover a cookie sheet with foil and spray with nonstick cooking spray. Spread green beans in single layer on cookie sheet.

Roast for 20-30 minutes, or until green beans are browned and cooked.
Indian-spiced roasted cauliflower

1 tsp cumin seeds

1 tsp coriander seeds
-
3/4 tsp sea salt
-
1/2 tsp of black pepper
-
Pinch of turmeric
-
2 tbsp extra virgin olive oil, plus extra, to drizzle (optional)

1 medium cauliflower, trimmed, cut into florets
-
Raita or yoghurt, to serve (optional)
-
Fresh mint leaves, to serve (optional)
Instructions:
Preheat oven to 350F. Combine the cumin, coriander, salt, pepper, and turmeric in a mortar. Pound with a pestle until coarsely combined.

Place the cauliflower in a single layer on a baking tray. Sprinkle with the spice mixture and drizzle with oil. Cook, shaking the pan occasionally, for 30 minutes or until golden and tender.
We personally like them a little crispy and eat them as soon as they come out of the oven.
Optional: Drizzle the raita or yoghurt with extra oil. Sprinkle cauliflower with mint leaves and serve with raita or yoghurt. This gives it a cool refreshing taste.
